  • Equipment and Tools
  • Recipes  7” Vanilla sponge cake recipe
    7” Chocolate sponge cake recipe
    Vanilla and Chocolate Buttercream
    Dark/Milk/White chocolate ganache
  • Types of icing (sugarpaste/fondant, modelling paste, flower paste/gum paste, pastillage). When to use each type and the advantages of mixing pastes. Use of Tylo/CMC powder
  • Covering a cake in sugarpaste, ganache and buttercream to a professional standard how to achieve sharp edges.
  • Basic piping/border work. How to decorate a simple buttercream Lambeth cake.
  • An introduction to sugar flower making.
  • How to add fresh flowers to a cake.
  • Character modelling. Learn how to make a cute character.
  • How to stack and dowel a multi-tiered cake
  • Introduction to colouring sugarpaste, ganache and buttercream.
  • Project during the 6 weeks – decorating a themed dummy cake.
  • Starting your own business
  • CRO registration
  • HSE registration and inspection – what to expect and how to prepare.
  • Laws surrounding allergens, correct labelling, etc.
